Holger's Crossover Cuisine combines Palmerian, Mediterranean, oriental and Asian elements.

Regional - national - international: although preparation is mostly locally oriented, his creations don't know any boundaries...

Traditional dishes and ingredients from the region are innovatively interpreted and interpreted according to the chef Holger'staste.

Thus, for instance rabbit meat from La Palma is prepared as Lasagne and the typical Barraquito (multi-layered coffee with liqueur, milk foam and sweet milk) is served as a dessert cream.

Spanish dates wrapped in bacon baked in filo dough. The bacon results as a light, white foam - simply delicious!
